You know that lovely smell of roasted sugar you get at Christmas markets? Nuts covered in sugar and spices: the ultimate Christmas snack.
The other day I decided to improvise and made some at home, using honey instead of sugar. They turned out pretty damn good!
Ingredients for 2 cups of almonds (you can improvise with the quantities of spices according to your taste):
1/4 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
3-4 tablespoons honey
1 tablespoon water
1 teaspoon olive oil
Put your almonds in the oven for 7-8 minutes at 180 degrees Celsius to roast. In the meantime, mix the spices in a bowl. Heat up the honey just a little bit so that you're able to stir it. Add olive oil and water and throw the roasted almonds into the liquid mixture, covering them on all sides. Transfer the coated almonds on a tray lined up with baking sheet. Make sure to drain them and to spread them out so that there isn't too much liquid around them (otherwise they will stick together). Sprinkle your spice mixture on top and put in the oven for another 5 minutes or so.
Ta-da! Depending on the oven, you might need to keep them in longer. Please stay next to your oven and check all the time - I swear, almonds can go from roasted to burned in a matter of seconds. Speaking from experience here.
